1 onion, finely sliced
1 red bell pepper, seedless, sliced
2 tomato slices
1/4 cup olive oil
6 medium-sized fish fillets (cod, tilapia or namorado)
2 soup spoons of lemon juice
1 cup coconut milk
6 sprigs of cilantro
1 finger-length pimenta dedo-de-moรงa, chopped
Salt to taste

In a refractory dish, arrange the first four ingredients
Place in a microwave-safe container and cook on medium heat for 7 minutes
Season the fish with lemon juice and salt, and place the fillets over the vegetable slices
Baste with coconut milk and sprinkle with cilantro and pimenta
Cover and return to the microwave for 10 minutes or until the fish is cooked through.
