2 medium yellow squash
250 g of canned sardines in oil
1 egg
1 tablespoon of chopped fresh parsley

Preheat the oven to 250°C (480°F)
Rinse the yellow squash and cut it in half lengthwise
Remove the seeds from the yellow squash
Remove the central spine from the sardines and mash with a fork
Mix in the egg until you get a paste
Add the parsley and season, if needed, with salt
Stuff each half of the yellow squash with this paste and wrap individually in aluminum foil or make one larger package with all the squash halves
Heat a baking dish for about 2 minutes
Place the packages in the heated baking dish
Put it in the oven for about 15 minutes
Serve 4 portions.
