Peel the pears, leaving the tops and bases intact
In a saucepan, combine the red wine, sugar, cinnamon sticks, juniper berries, and mint leaves
Let the wine simmer, then submerge the pears and cook for 10 minutes (use narrow and tall saucepans)
In another saucepan, warm the milk with vanilla extract until it's hot
Set aside
In a bowl, combine the egg yolks and gradually add the sugar while whisking well
Add the warm milk to the egg mixture while continuously whisking
Mix this preparation with the wine sauce in the saucepan and bring to a simmer
Whisk for 2 minutes until the sauce thickens slightly
Transfer the sauce to a container, let it cool, and refrigerate, uncovered
Place one pear on each dessert plate, drizzle with cold sauce, and garnish.
