Heat 4 tablespoons of oil in a frying pan
Add the eggplant cubes, paprika, and fry over medium heat for about 10 minutes or until the eggplant is cooked but still firm
Turn off the heat and reserve the eggplant
Preheat the oven to very hot (250°C)
Place the dough in a baking dish and cover with cheese
Cover with tomato sauce and top with garlic, eggplant, and remaining oil
Bake for 10-15 minutes or until the dough is golden brown
Cut into 12 slices.
