Prepare the polenta according to the packaging instructions
While still warm, spread it onto a rectangular baking dish greased with olive oil, about 1 inch thick
Let it cool and cut into rounds
Top each round with a slice of tomato and a slice of mozzarella cheese
Season with salt, olive oil, and black pepper, finishing with a basil leaf
Yields 20 corn fritters.
