2 bunches of cooked spinach, drained and chopped
1 teaspoon grated zest from 1/2 lemon
1 nutmeg
3 tablespoons melted butter or margarine
salt and black pepper to taste
12 slices of cooked prosciutto
1 cup of sour cream
2 tablespoons mustard
salt and black pepper for the sour cream, to taste
1/4 cup of breadcrumbs
1/4 cup of grated Parmesan cheese

In a bowl, combine the spinach, lemon zest, and nutmeg
Add the melted butter or margarine, salt, and black pepper, and mix well
Spread this mixture evenly over the 12 slices of prosciutto
Roll up and seal the ends with toothpicks
Arrange them in a paper-lined aluminum foil disposable baking dish, greased
Mix the sour cream with seasonings and place it on top of the prosciutto rolls
Mix the breadcrumbs with Parmesan cheese and sprinkle over the prosciutto
Bake in a moderate oven (170°F) without covering, for 30 minutes, or until golden.
