4 large egg whites

Beat the egg whites until stiff and add the cornstarch to form a meringue
Add the vanilla extract and pour into individual molds and smooth well
Place them in the microwave and cook on medium heat for 7 minutes
Let them cool and demold the puddings
Custard: combine all ingredients in a saucepan and cook over low heat to thicken
Stir constantly so it doesn't lump up
Serve over the pudding and garnish with fresh mint leaves.
