Blend half the peas, spinach, flour, milk, and salt in a blender
Bring to a boil over medium heat for 10 minutes, then remove from heat and add the eggs, grated cheese, and whipped egg whites
Pour into a pudding mold coated with butter and dusted with flour and cook in a water bath for approximately 45 minutes
Let it rest for 5 minutes, unmold, and serve surrounded by the remaining peas, sautéed with olive oil, chives, and parsley
