Whisk together the egg yolks and egg whites, then add the grated zest and orange juice
Strain through a fine-mesh sieve
Pour in the sugar and mix well
Pour into a hole-bored mold and caramelize
Bake in a preheated oven at 350°F for 20 minutes, then reduce heat to 325°F and bake for an additional 15 minutes
Let it rest for 10 minutes before serving
Release the sides and turn onto a serving plate
Garnish as desired.
