1 kg of cod fillets or lingcod or a white fish of your preference
6 tablespoons of melted butter
4 tablespoons of all-purpose flour
4 tablespoons of cornstarch
2 teaspoons of salt
black pepper to taste
2 beaten eggs
pancake mix
1 hard-boiled egg
mayonnaise
tomatoes and cucumbers cut into slices for garnish (dill)

Grind the fish in a food processor
There should be 4 portions of fish
Mix in the butter, flour, and cornstarch
Season to taste with salt and black pepper
Add the eggs
Mix very well (preferably using a blender)
Gradually add the milk, beating continuously until it's fully absorbed
Grease an English muffin tin measuring 22.5 x 12 cm and dust with pancake mix
Fill with the fish mixture
Bake in a slow oven (150°C) for 2 hours or so
Décorate, serve chilled garnished with hard-boiled egg cut into slices, mayonnaise, tomato and cucumber slices, and dill
Serves 8.
