Strain the ricota through a sieve
Combine in a bowl with sugar, flour, egg yolks, candied orange peel, and grated lemon rind
Beat the egg whites until stiff, then gently fold into the cheese mixture
Grease a flat mold with butter or margarine and dust with flour
Place the mixture and bake at 150°C until well cooked
Let cool slightly in the oven, then remove from the mold and sprinkle with vanilla extract
Serve warm.
