Wash the garlic thoroughly and cut the green and white parts into chunks
In a saucepan, melt the butter, add the garlic, and sauté over low heat for 15 minutes or until soft, with the lid covered
Process in a processor until well chopped
Return the purée to the saucepan, add the flour, and cook stirring constantly for 5 minutes
Add the milk gradually, scraping the bottom of the saucepan
Cook until thickened and comes away from the sides, season with salt
Serve warm
