6 medium sweet potatoes

3 tablespoons butter or margarine
1/4 teaspoon salt
6 medium sweet potatoes

Wash and peel the sweet potatoes
Cut them in half on a cutting board
Place them in a pot with enough water to cover them
Add 1/2 teaspoon of salt for each cup of water you use
Cook the sweet potatoes, covered, for 20-25 minutes or until they're tender when tested with a fork
Mash them up in a ricer or food mill
Place the mashed sweet potatoes in a blender or processor
Add milk, butter, and 1/4 teaspoon of salt
Blend until smooth and creamy
Serve in a serving dish
