2 1/4 cups of butter or margarine - 540 g
18 cups of milk - 4320 ml
1 tablespoon of salt - 15 g
1/2 tablespoon of nutmeg - 4 g

2 1/4 cups of butter or margarine - 540 g
18 cups of milk - 4320 ml

Wash the sweet potatoes thoroughly
Cook them until they are soft
Purée the cooked sweet potatoes in a food processor (keeping the potato skins intact)
Add the butter or margarine and milk
Heat over low heat
Mix well
Simmer, stirring constantly, as it starts to bubble
Season with salt and, if desired, nutmeg
When serving, check the seasoning.
