4 to 5 yams, peeled and chopped

1 tablespoon light margarine
Salt to taste

Boil the yams until tender, about 20-30 minutes or until they soften
Mash with a fork, adding the olive oil and milk
Fry in the margarine, season with salt
Keep the pot covered until the milk has reduced.
