1 kg of dried beef
100 g of smoked lean bacon, cut into small pieces
4 tablespoons of olive oil
1 large onion, finely chopped
1 clove of garlic, mashed
1 large green pepper, cut into strips
4 large tomatoes, peeled and seeded, chopped
1 small pimenta malagueta, chopped
1 bay leaf
1 xicara of hot water
For the cube:
2 kg of red Abobora
1 medium onion, finely chopped
2 tablespoons of olive oil
2 xicaras of beef broth
1 pinch of salt
to taste
6 sprigs of fresh parsley tied with 6 green onions
2 tablespoons of cornstarch
salt and pepper to taste
2 tablespoons of fresh mint, chopped

Soak the dried beef in broth overnight and change the water twice
Drain and simmer for 10 minutes
Reserve 1 xicara of the cooking liquid
Chop the beef finely
Fry the bacon in olive oil
Add the onion and garlic, sauté until golden, stirring constantly
Add the green pepper and dried beef, mix well and cook until the beef starts to brown
Add the tomatoes, pimenta malagueta, bay leaf, reserved cooking liquid, and hot water, stir well and simmer over low heat until the beef is tender and the sauce thickens
Prepare the cube: Cut the Abobora into small pieces, clean and wash it
Brown the onion in olive oil and add the Abobora, mix well
Add the beef broth as needed, season with salt and pepper to taste, and cook until the Abobora is tender
Remove the sauce and parsley, strain through a fine-mesh sieve, and return the Abobora mixture to the pan
Add cornstarch dissolved in a little water and simmer over low heat, stirring constantly, until the sauce thickens
Mix with the dried beef, stir well, and season with salt and pepper to taste
Finally, add fresh mint and serve.
