Heat the olive oil and sauté the chopped onion and garlic
Add the codfish and cook for two minutes
Add the vegetable broth and season with salt and pepper
Cover the pot and, after the pressure has dropped, reduce the heat and let it cook for another eight minutes
Let the steam dissipate completely, carefully open the pot, add the cashew nuts and scallions, mix well and serve immediately.
