Ingredients:
Dough: 1 1/2 cups all-purpose flour
1 teaspoon salt
1/2 cup cold unsalted butter, cut into small pieces
1 egg
3 tablespoons ice-cold water
Filling: 2 tablespoons unsalted butter
1/2 cup finely chopped onion
300 grams fresh Paris mushrooms, sliced
Salt and white pepper to taste
1 cup grated Swiss-style cheese (Emmental or Gruyère)
4 eggs
3/4 cup milk

Preparation:
Dough: In a clean surface, combine flour, salt, and cold butter
Mix until a crumbly texture forms

Make a depression in the center and add the egg and ice-cold water
Mix with a fork until a ball of dough forms
Wrap it in plastic wrap and refrigerate for 30 minutes

Preheat oven to medium temperature
Roll out the dough on a lightly floured surface, placing it over the tart pan and pressing the edges to form a crust
Use any remaining dough to form small balls, which you will press onto the sides of the tart pan
Press down firmly to cover the entire surface

Poke holes in the bottom of the dough with a fork in several places
Line the dough with aluminum foil and bake for 15 minutes or until firm
Remove the foil and continue baking for another 10 minutes, or until golden brown

Remove from oven and let cool
Keep the oven on
Filling: In a skillet, melt the butter
Add the onion and mushrooms and cook for 1 minute or until slightly softened
Season with salt and let cool

In a bowl, combine the remaining ingredients and mix well
Season with salt and white pepper

Place the mushroom mixture into the tart shell (if liquid forms, drain it)
Top with the egg mixture and bake for 25 minutes or until the filling is set.
