Cut the cherries in half
Wash them thoroughly with cold water
Remove the fibers, veins, and fats
Cut into squares
Also cut the pork cracklings into small cubes
Melt the butter or margarine
Add the pork cracklings and cherries and let it brown well
Clean the leek and beetroot
Cut them into slices
Add to the pot along with the scallions
Sprinkle with flour and let it caramelize
Peel the tomatoes and cut them into 8 pieces
Add to the pot
Add wine and broth enough to cover the meat
Add bay leaf and let it cook, in a pressure cooker, for 40 minutes
Open the pot and simmer for another 15 minutes, if desired
Add more wine and broth if needed
Season with salt, pepper, and herbs to taste.
