For the pasta
3 cups of all-purpose flour (360g)
4 eggs
2 tablespoons of olive oil

350g of butternut squash
2 cups of wilted and chopped spinach (150g)
1 1/2 cups of grated Parmesan cheese (180g)
6 slices of bread soaked in 1/2 cup of milk
A pinch of nutmeg
Salt to taste

1 1/2 cups of heavy cream
1 cup of chopped nuts (120g)
1/3 cup of grated Parmesan cheese
4 slices of bread without crust
1/2 cup of milk
1 clove of garlic
Salt and black pepper to taste

Prepare the pasta: Place the flour on a surface and shape a depression in the center
Add the egg and olive oil
Mix first with a fork and then with your hands until a firm dough forms
Wrap the dough in plastic wrap and let it rest for 30 minutes
Squeeze out as much liquid as possible from the wilted spinach and reserve
Remove the skins and seeds from the butternut squash, cut into thin slices, and wrap in aluminum foil
Bake in a preheated oven at 200°C for 25 minutes
Remove the paper
Process the butternut squash, spinach, and bread in a food processor or meat grinder
Add the Parmesan cheese, salt, and nutmeg
Unroll the dough into thin sheets with a pasta machine
Cut the strips to 10.5 cm wide
With a spoonful of filling, make hills on the dough, leaving a 4cm gap between them
Fold the dough, press the edges, and cut with a pastry wheel
Cook the ravioli in plenty of salted water until al dente
Drain and reserve
Prepare the sauce: Chop the nuts with garlic
Place the chopped nuts, heavy cream, and bread mixture in a pan
Bring to a simmer
When thickened slightly, season
Add the Parmesan cheese and mix
In a baking dish, place the ravioli and hot sauce
Serve immediately
Makes 10 portions.
