1 finely chopped onion
1/4 cup unsalted butter
1/4 cup all-purpose flour
1 cup milk
1 1/2 cups cooked and chopped spinach
1/3 cup raisins
1 nutmeg
Salt and black pepper to taste

Sauté the onion in butter until tender
Add the flour
Remove from heat and, gradually, add the milk, stirring well
Return to low heat, always stirring, until boiling and thickened
Add the spinach, raisins, and nutmeg
Season with salt and black pepper to taste
Cook for an additional 2 minutes
Note: 1 1/2 cups of cooked and chopped spinach corresponds to 1 medium-sized bunch of spinach.
