Cut the pears in half and remove the seeds and core
Process the ingredients using a coarse grater, including the onion, peppers, and hot pepper
Sprinkle with salt and let it sit for 2 hours
Drain well
Combine the sugar and vinegar in a saucepan, bring to a boil, then add the remaining ingredients
Bring to a boil again, then reduce heat and simmer for about 15 minutes
Strain into sterilized jars
Fill 3 jars of 250g each.
