Cut the avocados and pears into strips (1). Reserve
Place the egg white in a bowl and, using a wire whisk, incorporate the olive oil (2)
Then, gradually add the extra virgin olive oil, continuing to whisk until emulsified and forming a mayonnaise
Season with mustard, salt, and pepper (3)
In another bowl, combine the avocados and pears and add the seasoned mayonnaise, known as remoulade sauce (4)
Add the chopped shallot, Roquefort cheese, and nuts
Mix everything (5), adjust the seasoning, and serve immediately.
