1/2 cup all-purpose flour (60g)
1/2 cup unsweetened cocoa powder (45g)
1 tablespoon active dry yeast
5 eggs (separated whites and yolks)
1 cup milk (180ml)

2 cups heavy cream (480ml)
1/2 cup all-purpose flour (90g)
1 tablespoon brewed coffee
1/4 cup cornstarch (30g)
6 Seduço chocolate chips (130g) finely chopped

Preheat the oven to 200°C (hot)
Grease a 27x40cm baking dish with butter, line it with parchment paper, and grease the paper as well
Prepare the dough: in a small bowl, sift together the flour, cocoa powder, and yeast
Set aside
In a stand mixer, beat the egg whites until stiff peaks form
Add the milk and continue beating until stiff peaks form again
Add the yolks and beat until light and fluffy (about 5 minutes)
Add the flour mixture set aside earlier
Mix gently with a wooden spoon until homogeneous
Transfer the dough to the prepared baking dish
Bake in the preheated oven until it starts to release from the sides (about 30 minutes)
Let it cool for about 5 minutes
Remove the roll from the pan, dust with flour, and remove the parchment paper
Set aside
Prepare the filling: in a medium saucepan, combine all ingredients except the chocolate chip, and cook over medium heat, stirring constantly, until the mixture thickens (about 10 minutes)
Transfer to a medium bowl and let it cool
Add the chopped chocolate chips and mix well
Spread the filling over the dough and, with the help of a clean towel, roll it up along the longer side
Remove the towel, transfer the roll to a serving dish, and serve
