Beat the 8 egg whites in a stand mixer until stiff peaks form; add the yolks and beat until smooth; add the sugar, beating for another minute
Remove from the stand mixer and gently fold in the chocolate
Grease a plate with butter, sprinkle with all-purpose flour, and pour in the mixture
Place in a moderate oven (preheated) for approximately 8 minutes
Unmold over parchment paper sprinkled with sugar, and fill with whipped cream or strawberry gelato
Roll into a mousse shape and refrigerate for half an hour
Garnish with egg white strips cooked in syrup.
