Beat the egg whites until fluffy, then add the yolks and beat well
Combine the flour and spinach
Beat well
Pour into a 40cm x 27cm greased baking dish
Bake in a moderate oven (170°C) until lightly golden
Flip onto a cloth and roll up
Make the filling: sauté the onion in butter until starting to brown
Add the flour and mix well
Adequate the milk and cook until thickened
Add the grated Parmesan cheese and stir well
Season with salt and black pepper to taste
Remove from heat and fill the strata.
