1 1/2 cups all-purpose flour
1/2 cup rolled oats
2 eggs
1 pinch of sea salt
1 hand of cooked spinach
1/2 cup finely chopped onion
2 tablespoons olive oil
2 egg yolks
1 tablespoon grated Parmesan cheese
1 tablespoon soy sauce
1 pinch of nutmeg
chopped garlic and chili flakes to taste
1 1/2 cups all-purpose flour
1/2 cup rolled oats

Mix the two flours
Place on a flat surface, create a hole in the center, and add eggs and salt
Use a fork to mix until a soft dough forms
Heat olive oil in a pan, sauté onion and spinach
Remove from heat and add remaining ingredients
Roll out the dough thinly, spread the filling, and roll up
Wrap the oat roulade in cloth, secure ends, and steam for 20 minutes
Remove from heat, let cool, cut into slices
Place sliced rolls in a refractory dish, drizzle with olive oil, garlic, and chili flakes
Heat in oven until warm
Serve hot
