Season the beef with salt, garlic, and onion
In a large skillet, melt the butter over low heat and add the entire roast
Brown it well on all sides
Transfer it to a baking dish and pour in the remaining pan juices
Cover with aluminum foil and bake at 325°F for about 30 minutes
Uncover the beef and baste it with the pan drippings and meat juices
Meanwhile, boil the potatoes in water with salt until they're tender
Drain them, pat them dry with a paper towel, and fry them in hot oil
Place on paper towels to absorb excess fat
Remove the roast from the oven, slice it, and serve with fried potatoes
