Preheat the oven to 220 degrees
Grease the bottom of a medium-sized frying pan that can go into the oven and heat it well
Add the meat and without stirring or poking, sear well on one side and then flip to sear the rest
Sprinkle with salt and pepper and place in the oven until desired doneness is reached (usually 10-15 minutes for rare: you'll feel that the meat is soft when touched with a finger; 20-25 minutes for medium-rare: the meat will start to firm up; and 30 minutes for well-done: the meat will be very firm)
Remove from oven, let it rest on a plate for 30 minutes and cut into thin slices.
