To make: Clean the meat thoroughly, removing any fat and rub it with salt and black pepper
Ajuste the oven rack to the middle position and place the meat
(Don't forget to put a pan underneath to catch the drippings from the meat and seasonings.) Leave it in the oven for about 40 minutes
To check if the meat is done, make a small incision in the center
