In a large bowl, season the salmon fillets with lemon juice, salt, and parsley
Cover with plastic wrap and refrigerate for at least 2 hours, removing only 30 minutes before serving
Preheat a grill to high heat
Brush both sides of the salmon fillets with olive oil
Place 2 fillets at a time on the hot grill, flipping them halfway through cooking
Check if they're cooked by inserting a fork; the fish should flake apart easily
Once cooked, place the grilled salmon in a serving dish and keep warm.
