Soak the sago in red wine for 1 hour: bring to a boil with sugar, lemon peel, and cinnamon
Then reduce heat and simmer, stirring constantly
Cook until the mixture thickens and the sago becomes transparent, still stirring
Pour into a mold and refrigerate until firm
Unmold and serve, or serve in a compote dish
If desired, serve with a vanilla sauce.
