1/2 cup of olive oil
1/4 cup of vegetable oil
2 spoons (tablespoons) of chopped cilantro
2 spoons (tablespoons) of white vinegar
1/2 spoon (teaspoon) of mustard
1/2 teaspoon of white pepper
1 kg of small sweet potatoes
2 eggs
Salt to taste

Beat the eggs with half of the vinegar, mustard, salt, and pepper in a blender
Add the olive oil and vegetable oil in a stream
Join the remaining vinegar and beat until thickening
Peel and boil the sweet potatoes in water
When they are cooked but still firm, cut them into thin slices lengthwise
Once cooled, mix them with mayonnaise
Sprinkle with chopped cilantro and serve.
