6 medium sweet potatoes, cooked
1/2 teaspoon of ground thyme
1/4 teaspoon of dried marjoram
2 teaspoons of salt
1/4 teaspoon of black pepper
1 tablespoon of caraway seeds
1/4 cup of olive oil
1/4 cup of apple cider vinegar
1 medium onion, finely chopped
1/2 cup of mayonnaise
2 tablespoons of mustard
3 hard-boiled eggs, diced

Cut the sweet potatoes and place them in a large bowl
Combine the seasonings with the olive oil and apple cider vinegar in a jar; shake well to mix everything together
Pour the mixture over the sweet potatoes and let it sit for 1 hour
Add the chopped onion, mayonnaise, and mustard
Crush two of the hard-boiled eggs, diced, and add them to the sweet potato mixture
Mix lightly
Serve on lettuce and garnish with tomato slices and the remaining eggs.
