2 pounds (about 1 pound) of cooked, shredded meat (beef or pork)

Place the onion in a bowl and cover it with boiling water
Let it sit for five minutes
Drain and rinse under running water. Reserve
Put the shredded meat, onion, and seasonings - including olive oil, vegetable oil, vinegar, salt, black pepper, and thyme - into a salad bowl
Mix everything together very well
Refrigerate, covered with plastic wrap, for one hour
When serving, add the diced tomato and mix gently.
