1 small pineapple, ripe (about 1.2 kg)

1/2 small red cabbage, finely chopped (400 g)
1 mashed garlic clove
2 small carrots, coarsely grated (200 g)
1 medium onion, coarsely grated (100 g)
1 teaspoon of salt or to taste
1 pinch of black pepper
3/4 cup of mayonnaise (150 g)
2 slices of crispy bacon (30 g)

Cut the pineapple into cubes and place them in a bowl
Sprinkle with grated ginger
Add the chopped red cabbage, mashed garlic, carrots, and onion
Season with salt and black pepper
Add the mayonnaise and mix
Transfer to a large salad bowl
In a skillet, fry the bacon slices over high heat until golden brown and crispy
Drain, chop, and sprinkle over the salad
Serve immediately
