Pit the chuchos (apply a little oil to your hand so they don't stick), remove the seeds and grate coarsely
Set aside
Peel the oranges, removing all white skin
Use a sharp knife to separate into segments and remove the seeds
Combine in a bowl, add the chuchos, onions, and parsley
Mix in the olive oil, lime juice, salt, and pepper
Add to the salad and mix carefully
Serve after 6 hours, if desired
Remove the orange pulp carefully and serve the salad in the orange casings.
