100g of cheddar cheese, cut into small cubes

100g of ham, cut into small cubes
10 pitted olives

Soak the soybeans in cold water overnight
The next day, massage the soybeans to release their skins, then rinse them under running water
Place the soybeans in a pressure cooker and cook for 1 hour and 40 minutes with water
The soybeans should retain some texture, but become tender
Let them cool down
Grate the carrots coarsely, along with the celery
Chop the bell peppers into fine pieces
Pit and chop the olives finely
Do the same with the green onions
Combine all ingredients in a bowl and season to taste with salt, vinegar or lemon juice, and olive oil.
