Mustard:
1 tablespoon freshly squeezed lime juice
1 tablespoon prepared mustard
salt and pepper to taste
1 cup heavy cream
Salad:
2 cups cooked and diced potatoes
2 cups cooked and diced beets
1 cup chopped fresh green peppers
2 cups cooked and diced chicken (roasted or cooked), cut into pieces
lettuce leaves

To make the dressing: combine lime juice with mustard, salt, and pepper
Add heavy cream gradually, whisking well
To assemble the salad: mix together potatoes, beets, and green peppers
Add chicken and drizzle the dressing over the top just before serving
Serve on lettuce leaves.
