3 ripe and firm mangoes, diced
1/2 cup of finely chopped red onion
1/4 cup of chopped cilantro
1/2 cup of mango puree
1 pound of shrimp, flaked
1/4 cup of diced finger pepper
1/4 cup of chopped green garlic (available at oriental stores)
1/4 cup of lime juice
Salt and pepper to taste
2 tablespoons of olive oil

Cut the mangoes into medium-sized cubes, mix with onions and puree
S season the shrimp with salt and pepper, then sauté in a non-stick skillet with a little olive oil for 3 minutes
Let it cool down, then add finger pepper and green garlic
Season with lime juice and olive oil
Let it chill
In small cups, place mango at the bottom and shrimp salad on top, garnishing with green garlic
Yields 4 servings.
