Salt to taste
5 large leaves of parsley (for garnish)

Clean and cook the shrimp in a steamer for 5 minutes or until cooked through. Reserve
Arrange the melon and shrimp on individual plates. Reserve
Prepare the dressing: whip the heavy cream until slightly thickened
Add the chopped parsley and season
Add a little of the dressing to each plate and mix gently
Garnish with additional parsley
Serve 4 portions
