1 can of hearts of palm (300g)
4 tablespoons of olive oil
1 tablespoon of lemon juice
1 tablespoon of vinegar
1 tablespoon of chopped scallion greens
1 tablespoon of cooked sausage, crumbled
Salt and black pepper to taste
1 tomato, cut into cubes (140g)
1 hard-boiled egg, peeled and diced
1 can of hearts of palm (300g)

Drain the hearts of palm
Cut into slices
Arrange on a platter with the tomato
Mix in the olive oil, lemon juice, vinegar, sausage, scallion greens, salt, and black pepper to taste
Spread over the hearts of palm
Sprinkle with the egg
Serve two ways.
