3 cups of cooked soybeans, warm and drained
1/4 cup of olive oil
1/3 cup of vinegar
salt and black pepper to taste
1 clove of garlic minced
1/2 cup of chopped green onion
1/2 cup of chopped fresh parsley
1/3 cup of chopped fresh dill (optional)
2 tablespoons of chopped fresh cilantro (optional)
2 tablespoons of chopped tarragon leaves (optional)

Place the warm soybeans in a bowl
Mix together the olive oil, vinegar, salt, black pepper, and garlic, then pour over the soybeans
Cover and refrigerate for several hours
Add the remaining ingredients and mix well
Refrigerate again before serving
Serve chilled or at room temperature.
