1 tablespoon of unflavored gelatin
2 cups of tomato juice
salt and pepper to taste
1 cup of chopped fresh parsley
1 cup of grated and peeled carrot
1 tomato
1/2 cucumber
1 tablespoon of unflavored gelatin
2 cups of tomato juice

Soak the gelatin in 1/4 cup of warm tomato juice
Dissolve it in hot water and add the remaining juice
Season to taste
Refrigerate until slightly set, then stir in the parsley and carrot
Pour into individual molds and refrigerate until firm
Remove from molds
Garnish with a sliced tomato and some cucumber slices.
