Cook the beans separately with water until they are tender, but not mushy
Drain and place in a bowl
Add the peas and tomatoes and reserve
Make the dressing: mix the vinegar with cumin and salt
Whisk with a fork and add the olive oil gradually
So, add more olive oil at the moment when the previous one has been fully incorporated
Add the mustard, whisk again, and adjust the seasoning
Pour the warm bean mixture with this dressing, just to coat the ingredients, and serve with extra dressing on the side.
