For the salad
2 cups of green beets, finely chopped - 200g
4 medium-sized carrots, grated on coarse grater - 470g
4 cups of radishes, grated or processed in a processor - 450g
1 large cucumber, peeled, seeded, and grated on coarse grater - 300g
1 large apple, peeled, cored, and grated on coarse grater - 230g
1/2 cup of chopped fresh parsley - 40g
2 cups of red beets, finely chopped - 200g
1 small red onion, finely chopped
For the dressing
2 cups of mayonnaise - 450g
3/4 cup of vinegar - 180ml
2 tablespoons of lemon juice
4 tablespoons of mustard
Salt and black pepper to taste

For the dressing
2 cups of mayonnaise - 450g
3/4 cup of vinegar - 180ml
2 tablespoons of lemon juice
4 tablespoons of mustard
Salt and black pepper to taste
Prepare the dressing
Place the mayonnaise in a bowl and gradually add the remaining ingredients, mixing well
Mix until you get a smooth, even consistency
Prepare the salad
Mix together the green beets, carrots, radishes, cucumber, apple, and half of the parsley
Add enough dressing to moisten
Mix in the red beets, the remaining parsley, and the onion
Add enough dressing to moisten
Place the salad greens in the center, surrounded by the red beet salad
This salad can be prepared entirely a day in advance, stored in an airtight container in the refrigerator
Check the seasoning before serving
Serves 8-10
