1 cup of shredded red cabbage
1 and 1/2 cups of chopped green onions
1/2 cup of diced bell peppers
1 cup of red beetroot with skin, cut into cubes
1 cup of pineapple in syrup, drained and cubed
For the dressing
1/3 cup of olive oil
1/4 cup of vinegar
1 teaspoon of salt
3 tablespoons of grated carrot
3 tablespoons of lemon juice

1 cup of pineapple in syrup, drained and cubed
For the dressing
1/3 cup of olive oil
1/4 cup of vinegar
1 teaspoon of salt
3 tablespoons of grated carrot
3 tablespoons of lemon juice
Combine all the salad ingredients in a bowl and set aside
Prepare the dressing: mix all the ingredients until they are fully incorporated and add to the salad
Let it sit for 10 minutes.
