4 handfuls of mixed greens
4 thick slices of white cheese cut horizontally
1 cup of toasted breadcrumbs
2 tablespoons of dried herbs (such as parsley, oregano, or thyme)

1 tablespoon of mustard
3 tablespoons of white vinegar
3/4 cup of olive oil
1 teaspoon of grated ginger
Salt and black pepper to taste

Prepare the dressing: blend in a blender, for 15 seconds, the mustard and vinegar
Then, with the motor running, add the olive oil slowly until the dressing thickens
Season with ginger, salt, and black pepper. Reserve
Mix the breadcrumbs with the herbs and sprinkle on the cheese slices
Heat the oil and fry the cheese until it's golden brown and crispy
Season the greens with the dressing and assemble each plate with tempered greens and a slice of crispy cheese
Serve immediately.
