Dust the gelatin over the water and let it sit for a few minutes
Heat the mixture while stirring constantly until dissolved
Remove from heat and mix with apples, celery, mustard, and lemon juice
Place in the refrigerator to thicken slightly, stirring occasionally
Grease a large serving dish and line the bottom and sides with slices of ham overlapping slightly
Pour the gelatin mixture into the dish and top with remaining slices
Refrigerate until completely set and unmold
