Mix the salt, white wine, mustard, and water
Season the salmon with this mixture
Arrange the fish in a baking dish and bake
When it's well cooked, remove from oven
Discard the excess liquid that forms during cooking and reserve
Cream:
In a saucepan, dissolve the flour in milk over low heat, stirring constantly until thickened
Add spinach and cheese and cook for 3 minutes
Assembly:
Tear the salmon into rough pieces and arrange in a small baking dish
Cover with spinach cream
Bake to gratinate.
